Pre-heat oven to 350° F.
Spray a baking sheet with non-stick cooking spray and set aside.
Combine crackers, thyme, oregano, and parsley in a pie plate.
Pour egg substitute into a separate pie plate.
Sprinkle each fillet with salt, dip into egg substitute then into cracker mixture, pressing so that coating sticks.
Place fillets on baking sheet and spray them lightly with cooking spray.
Bake until catfish is cooked through and coating begins to brown, about 25 minutes.
Serve warm with lemon wedges. Makes 6 servings.
