You'll Need

    • 2 cups romaine hearts
    • 1 large carrot, cut into sticks
    • 1/2 medium cucumber, cut into sticks
    • 1 red bell pepper, cut into sticks
    • 1 small jicama, peeled and cut into sticks
    • 3/4 cup snow peas

    Dressing:
    • 1 small ripe avocado
    • 1/3 cup cucumber, chopped
    • 1 tablespoon lemon juice


Instructions

  1. Arrange vegetables on a plate and serve.

  2. Purée dressing ingredients until smooth.

    Makes 4 to 5 servings.
